Marinated Butter Beans

Ingredients
2 cloves garlic
½ tsp red chili flakes
1 tsp cumin seeds
¼ tsp pepper
½ tsp salt
1 small handful parsley
½ lemon
¼ cup olive oil
½ cup cooked giant butter beans
Method
PREP. Mince garlic. Grind cumin in spice grinder or mortar and pestle. Roughly chop parsley.
MAKE. Add garlic, red chili flakes, ground cumin, pepper, salt, parsley, juice of the lemon, and olive oil to a medium mason jar or bowl with a lid. Mix well to combine. Add cooked beans. Mix again to coat all beans. Cover jar/bowl.
REFRIGERATE. Place jar in refrigerator for at least 3 days to allow flavors to develop.
SERVE. Remove jar from fridge and let oil come to room temperature if solidified. Drain beans from oil. Serve as desired.

Serve on toast, in a mezze spread, or with crackers as a snack
If you do not have giant butter beans, use chickpeas or white beans
This recipe is fantastic for meal prep as the oil will preserve the beans for a good amount of time
When draining the beans, reserve the oil to use in pastas, salads, toast, or anywhere else you want a flavorful drizzle
