Pumpkin Seed Chutney

Ingredients
¼ cup pumpkin seeds
½ jalapeño
¼ cup fresh mint leaves
¼ cup fresh cilantro leaves
½ lemon
1 tsp salt
¼ cup water, plus more as needed
Method
PREP. Remove mint leaves from stem. If sensitive to spice, remove seeds from jalapeño.
BLEND. Add pumpkin seeds, jalapeño, mint, cilantro, lemon, salt, and water to blender. Blend until smooth. Add more water as needed to achieve desired consistency.
SERVE. Pour into bowl or jar of choice.
Notes
Can be made with all mint or all cilantro depending on what you have
Store in fridge and use within a week as the herbs will go bad quickly
Lightly toast pumpkin seeds before blending for a more nutty flavor
Jalapeño can be substituted with a spicier pepper for more heat
