Smashed Potatoes

Ingredients
1 lb baby yellow potatoes
Salt, to taste
2 tbsp grapeseed oil
3 cloves garlic
1 tbsp Italian seasoning
Method
PREP. Preheat oven to 375F. Line a baking sheet with parchment paper or a silicone mat. Peel and mince garlic finely.
BOIL POTATOES. Add potatoes to a large saucepan. Cover with water. Bring to a boil over medium heat. Cook until potatoes can be easily pierced with a fork, about 10 minutes. Drain and rinse with cool water. Let cool slightly.
MAKE HERB OIL. Add oil, garlic, Italian seasoning, and salt to a small bowl. Mix well to combine.
SMASH AND COAT POTATOES. Place potatoes on prepared baking sheet. Using the bottom of a glass or small bowl, gently press down on each potato until it is flattened to about ¼’ thick. Brush each potato with the herb oil mixture.
BAKE. Bake potatoes until edges are brown and crispy, about 20 minutes.
SERVE. Plate as desired.

Use a neutral cooking oil for best results. I went with grapeseed but you can also use olive oil (not extra virgin) or avocado oil
I used the Trader Joe’s Sofrito seasoning blend
