Gluten Free Chocolate Waffles

The combination of chocolate and chickpeas might sound odd but it actually works really well. The bitterness of the cacao is offset by the slight sweetness of the chickpea flour. It also happens to be gluten free and soy free, making it a great option for people who are sensitive to either of those. Packing in 14 grams of protein and 7 grams of fiber, you are sure to be smiling for the rest of your day after eating these!

Ingredients
½ cup chickpea flour
1 tsp baking powder
1 tbsp cocoa powder
1 tsp chia seeds
¼ tsp ground cinnamon
2 tsp cornstarch
¼ tsp vanilla extract
⅓ cup + 2 tsp non dairy milk
Method
PREP. Preheat waffle iron.
MIX DRY INGREDIENTS. Add chickpea flour, baking powder, cocoa powder, chia seeds, cinnamon, and cornstarch to a medium mixing bowl. Mix well to ensure there are no lumps and everything is evenly distributed.
ADD WET INGREDIENTS. Add vanilla and non-dairy milk to dry mixture. Mix well to combine.
COOK. Lightly brush waffle iron with oil. Add a few ladles of batter, enough to cover the base of the iron. Cover and cook as per waffle iron instructions. You will know it is done when it stops steaming. Repeat with remaining batter.
SERVE. Top with desired toppings. Serve warm.
