Avocado Cowboy Caviar

Ingredients
½ medium or 1 small avocado
1 small persian cucumber
¼ onion
¼ bell pepper
½ medium tomato
2 tbsp black beans
2 tbsp frozen corn
1 tbsp pumpkin seeds
½ lemon
1 small handful cilantro
1 tbsp taco seasoning
1 tbsp nutritional yeast
Salt, to taste
Black pepper, to taste
Method
MAKE DRESSING: Add lemon juice, finely chopped cilantro, taco seasoning, nutritional yeast, salt, and pepper to a small bowl. Mix well until combined. Set aside.
PREP: Place corn in a bowl of hot water for 5 minutes while you prep the rest of the ingredients. Cut avocado in half. Remove pit and skin. Dice into ½ inch cubes. Dice cucumber. Finely chop onion. Dice bell pepper. Dice tomato. Rinse black beans. Drain corn.
ASSEMBLE: Place all ingredients from step 2 into a medium bowl. Pour dressing over the top. Add pumpkin seeds. Mix well until all ingredients are evenly distributed and covered in dressing.
SERVE: Eat with starch of choice.
