Crispy Quinoa Chocolate Bark

Ingredients
¼ cup dry quinoa
¼ cup dark chocolate chips
1 tsp coconut oil
Method
POP QUINOA. Heat a dry skillet over medium heat. Add quinoa in a single layer. When the quinoa starts to brown and pop, turn off the heat. Remove quinoa from skillet and place into a bowl.
MELT CHOCOLATE. Place chocolate chips in a microwave safe bowl. Microwave in 30 second intervals until melted, stirring in between each round. Add coconut oil to chocolate and mix well.
MIX. Add quinoa to chocolate. Mix well to evenly distribute quinoa. Spread evenly on a baking sheet.
CHILL. Place in fridge to set until chocolate has hardened, at least 30 minutes.
SERVE. Break into desired number and sized pieces.
