Creamy Dairy-Free Harissa Pasta

Ingredients
1 medium red onion
1 medium red bell pepper
1 medium zucchini
6 cloves garlic
Salt, to taste
1 tbsp harissa paste
2 tbsp tomato paste
2 tbsp hummus
1 tbsp nutritional yeast
4 oz dried pasta
Method
PREP: Slice onion. Slice bell pepper. Slice zucchini. Mince garlic. Roughly chop spinach.
SAUTÉ VEGETABLES: Heat a medium skillet over medium heat. Add a splash of oil to prevent sticking. Add onion. Cover and cook until onions have softened and slightly browned, about 5 minutes. Add garlic. Cook until fragrant, about 1 minute. Add bell pepper and zucchini. Cook until zucchini has browned and bell peppers have reduced in volume, about 7 minutes.
COOK PASTA: Heat a medium pot of water. Add salt. Cook pasta according to packet directions. Drain, reserving some of the pasta water. Add pasta to skillet with veggies.
MAKE SAUCE: Add harissa, tomato paste, hummus, and enough reserved pasta water to the skillet to make a creamy sauce. Add spinach. Cover and let wilt, about 3 minutes. Season with nutritional yeast, salt, and pepper to taste.
SERVE: Divide among bowls.
