Creamy Miso Gnocchi with Greens

Ingredients

1 16-oz package gnocchi

4 spring onions

5 cloves garlic

1 small head broccoli

1 cup edamame

1 tsp maple syrup

½ lemon

Salt, to taste

Pepper, to taste

4 tbsp tahini

4 tbsp miso paste

Water, as needed

Method
  1. PREP. Finely chop spring onions. Mince garlic. Roughly chop broccoli.

  2. COOK GNOCCHI. If using an air fryer, lightly coat gnocchi in olive oil. Place in air fryer basket. Cook at 350F until lightly browned, about 7 minutes. *if using skillet, see notes below*

  3. COOK VEGETABLES. Heat skillet over medium heat. Add a splash of oil. Add spring onions, garlic, and broccoli. Sauté until garlic is browned and broccoli is softened and bright green, about 5 minutes. Add edamame. Cook until edamame is warmed, about 2 minutes. Add maple syrup, lemon juice, lemon zest, and a pinch of salt. Mix until everything is combined. Add gnocchi.

  4. MAKE SAUCE. Add tahini to skillet. Stir to evenly distribute. Add water as needed to make a creamy sauce. Once all vegetables are coated in tahini, turn off heat. Add miso. Stir well to break up miso chunk and ensure it is distributed evenly. Add more water, if needed.

  5. SERVE. Divide among bowls or plates.

  • Is store bought gnocchi vegan? Check the ingredients list when buyign gnocchi. There are some brands that add egg and/or cheese to the dough. Many brands are just made with potato and wheat flour, making it suitable for a plant-based diet. 

  • How can I make gnocchi crispy without an air fryer? Gnocchi can also be pan fried instead of air frying. Heat a second skillet over medium heat. Add a splash of oil. Add gnocchi. Cook until gnocchi is warmed and slightly browning, about 4 minutes.

  • When should you add miso to retain its nutritional value? Miso should be added after heat is turned off to ensure the probiotics do not get killed by heat. 

  • How can I make the sauce creamier? Reserve about 1 cup of pasta cooking water and add in small increments when mixing the pasta, sauce, and vegetables.
