Crispy Tofu Avocado Sandwich

Ingredients

1 14-oz block firm tofu

1 tbsp cornstarch

2 tsp paprika

2 tbsp tamari or soy sauce

1 tsp sumac

1 avocado

1 tsp za’atar

1 lemon

2 green onions

Salt, to taste

Shredded lettuce

4 roasted red peppers, optional

8 slices bread

Oil, for cooking

Method
  1. PREP: Press tofu with paper towels under heavy object to release excess water for at least 30 minutes. Preheat oven to 425F. Line a baking sheet with parchment paper or a silicone mat. Thinly slice green onions. Slice red peppers into strips.

  2. MAKE TOFU: Use the large holes of a box grater to grate tofu directly onto lined baking sheet. Sprinkle over cornstarch, paprika, salt, tamari, sumac, and a drizzle of oil. Mix well until all tofu is coated. Spread evenly in single layer on mat. Bake in preheated oven until golden and crispy, about 30 minutes. Remove halfway during cooking and stir.

  3. MAKE AVOCADO: Add avocado to bowl. Add za’atar, green onions, lemon juice, lemon zest, and salt. Mash until smooth.

  4. ASSEMBLE: spread avocado on one side of a piece of bread. Top with lettuce, ¼ of the shredded tofu, and red pepper slices. Top with other slice of bread. Repeat for remaining 3 sandwiches.

  5. SERVE: If storing for meal prep, wrap in foil and place in fridge. When ready to eat, place in toaster oven or air fryer until warm, about 7 minutes.
