Grain Free Pumpkin Pancakes

These pancakes use quinoa flour as a base to add a nutty flavor while keeping the dish gluten and grain free.

Ingredients

¾ cup uncooked quinoa

1 tbsp baking powder

½ tbsp pumpkin pie spice

¼ tsp salt

¾ - 1 cup non dairy milk

6 tbsp pumpkin purée

1 tsp maple syrup

Oil, for cooking

Method
  1. PREP. Place quinoa in spice grinder or blender. Grind into a fine powder.

  2. MAKE BATTER. Add quinoa flour, baking powder, pumpkin pie spice, and salt to medium mixing bowl. Make a well in the middle. Add milk, pumpkin purée, and maple syrup. Mix into a thick and uniform batter. Add milk as needed to achieve desired consistency.

  3. COOK. Heat skillet over medium heat. Brush with oil to prevent sticking. Add a dollop of batter onto the pan. Let cook until top begins to dry, about 3 minutes. Flip. Cook on second side until pancake is firm to touch. Remove from skillet. Place in oven on low temperature (200F). Repeat with remaining batter.

  4. SERVE. Top with desired fruit, syrup, nuts, or any other toppings.
