Ice cream that can support your heart health and does not require an ice cream maker? What's not to love about that!

Why you will love this recipe
Supports heart health. This kulfi contains oats, soy milk, and nuts, all of which are part of the portfolio diet that has been studied to help lower LDL cholesterol levels and reduce your risk of heart disease.
Uses pantry friendly ingredients. The ingredients used to make this are pantry staples that are easily available and versatile.
Can be made without an ice cream maker. Kulfi is creamy and does not require air to be churned into it, making it an ideal recipe to make if you do not own an ice cream maker.
Ingredients
1/4 cup rolled oats
1 tbsp liquid sweetener of choice
2 tbsp cashews
1 cup soy milk
1 tsp ground cardamom
1/4 tsp rose water
Method
COOK BASE. Add rolled oats, sweetener, cashews, and soy milk to a pot over medium heat. Bring to boil, then reduce to a simmer. Cook until the oats are mushy but there is still some liquid remaining, about 10 minutes. Add ground cardamom and mix well. Remove from heat and let cool.
BLEND. Add rose water to base. Pour mixture into blender. Blend until completely smooth. If needed, add more milk 1 tbsp at a time. The consistency should be flowy but not liquid.
CHILL. Pour into popsicle moulds, an ice cube tray, or a silicone muffin mold. Add a wooden spoon or stick to be the handle. Place into freezer to chill until firm, at least 4 hours or overnight.
SERVE. Carefully remove from mould. Serve chilled.
Frequently Asked Questions
Can you make kulfi without an ice cream maker? Yes, traditionally kulfi is made without churning it since you want a thicker, creamier texture with less air.
Is non-dairy kulfi creamy? This kulfi uses the mixture of cooked oats, cashews, and plant-based milk to mimic the creaminess of full fat milk or cream in traditional kulfi.
What sweetener should I use for kulfi? I made this batch with agave. You could also use honey, maple syrup, or cane sugar. I would not recommend using dates, stevia, or monkfruit since they may not let the ice cream reach its desired consistency.
