Mango Overnight Oats

Ingredients
1 mango
½ cup rolled oats
½ tbsp chia seeds
1 scoop protein powder, optional
½ tsp vanilla extract
½ cup plant milk
⅛ tsp salt
Toppings of choice
Method
PREP. Peel and dice mango. Prep other toppings as needed.
ASSEMBLE. Place rolled oats, chia seeds, protein powder (if using), plant milk, and a pinch of salt into a bowl. Mix together until well combined. Add water as needed if the mixture is too chunky.
CHILL. Place in bowl or mason jar. Top with diced mango. Place in fridge to soften oats, at least overnight.
SERVE. Remove from fridge. Add desired toppings.
