Mango Shrikhand
Servings:
1
Difficulty:
When I was a child, my family would frequent a small Indian restaurant where there would always be a big bowl of this creamy, sweet yogurt treat on the buffet. I shamelessly would fill half of my plate with that, no regrets. This version keeps the flavor while relying on the sweetness of the frozen mangoes.

Frequently Asked Questions
What yogurt works best for shrikhand? A thick yogurt is the most authentic. I used homemade soy yogurt which closely mimics the taste of indian dahi. You could also use a store-bought greek style yogurt or a coconut yogurt.
How can I make shrikhand thicker? Place the yogurt in a cheesecloth and let the excess water drain out. This is optional but will result in a thicker, mousse-like consistency.
How can I make shrikhand sweeter? Use frozen mangoes as these are frozen at peak sweetness. If you would still prefer it to be sweeter, you can add a touch of a sweetener of choice.
