Garlic and Herb Marinated Butter Beans

On one of my Trader Joe’s trips, I came across their canned marinated beans. This recipe came as a marriage between the creamy, big butter beans and the herbaceous lemon parsley marinade that they have on the chickpeas.

  • Meal prep friendly. Since these beans develop more flavor as they marinate, this is a great dish to make early in the week and let it sit until you need to use it. 

  • Feeds good gut bacteria. Beans are a rich source of a type of fiber called resistant starch which is created when the beans are cooked and then cooled. Your gut bacteria love to feed on resistant starch and produce beneficial chemical signals for the rest of your body. 

  • Can be used in various ways. Add these beans onto a slice of crunchy toast, mix into a salad, or eat on its own as a snack.

Ingredients

2 cloves garlic

½ tsp red chili flakes

1 tsp cumin seeds

¼ tsp pepper

½ tsp salt

1 small handful parsley

½ lemon

¼ cup olive oil

½ cup cooked giant butter beans

Method
  1. PREP. Mince garlic. Grind cumin in spice grinder or mortar and pestle. Roughly chop parsley.

  2. MAKE. Add garlic, red chili flakes, ground cumin, pepper, salt, parsley, juice of the lemon, and olive oil to a medium mason jar or bowl with a lid. Mix well to combine. Add cooked beans. Mix again to coat all beans. Cover jar/bowl.

  3. REFRIGERATE. Place jar in refrigerator for at least 3 days to allow flavors to develop.

  4. SERVE. Remove jar from fridge and let oil come to room temperature if solidified. Drain beans from oil. Serve as desired.
