Pumpkin seeds are a nutrient powerhouse and can easily be added to numerous dishes. Blending them into this chutney adds creaminess and nuttiness with a boost of protein and micronutrients.

Ingredients
  • ¼ cup pumpkin seeds

  • ½ jalapeño

  • ¼ cup fresh mint leaves

  • ¼ cup fresh cilantro leaves

  • ½ lemon

  • 1 tsp salt

  • ¼ cup water, plus more as needed

Method
  1. PREP. Remove mint leaves from stem. If sensitive to spice, remove seeds from jalapeño.

  2. BLEND. Add pumpkin seeds, jalapeño, mint, cilantro, lemon, salt, and water to blender. Blend until smooth. Add more water as needed to achieve desired consistency.

  3. SERVE. Pour into bowl or jar of choice.
