Radicchio Apple Salad

Meet radicchio, a purple and white vegetable that resembles cabbage but is actually more closely related to the chicory family. It can be eaten cooked or raw to tone down the bitterness. Pair it with a fall main dish like risotto and a roasted vegetable side dish for a fall holiday spread.

Ingredients

1 head radicchio

1 medium apple

½ cup mixed nuts

2 tbsp tahini

½ tbsp apple cider vinegar

½ tbsp dijon mustard

½ tsp salt

½ tsp black pepper

2 tbsp nutritional yeast

Method
  1. PREP. Core radicchio and thinly slice into long strips. Core apple and grate or cut into small pieces. Roughly chop mixed nuts, if desired.

  2. MAKE DRESSING. Add tahini, apple cider vinegar, Dijon mustard, salt, pepper, and nutritional yeast to a jar or small bowl. Whisk well to combine. Add water 1 tbsp at a time if needed to reach desired consistency.

  3. SERVE. Place radicchio, apples, and mixed nuts in a large bowl. Drizzle over dressing. Toss to combine.

  • What can I use instead of radicchio? If you cannot find radicchio, you can use endive or escarole. If none of these are available, use kale but massage with olive oil to soften and reduce bitterness.

  • What type of apple should I use? Use an apple that is crunchy and sweet so it retains its texture in the salad. I used a honeycrisp.

  • Are mixed nuts a healthy salad topping? Yes, mixed nuts add healthy fats which can help you absorb the nutrients from the radicchio. Look for a mix that is lower in salt. I used the Trader Joe’s Olive and Herbs Mixed Nuts. 

  • How can I make this ahead of time? Make the dressing and the vegetables separately. When ready to serve, mix desired amount of dressing with the produce and add the nuts.
