Why you will love this recipe
Nutrients are more available for your body to absorb.Blending the chia seeds into this pudding breaks them down which makes your body more able to take in the beneficial nutrients.
Has a creamy, pudding like texture. If you are not a fan of the texture of traditional chia pudding, this one masks the sliminess by blending the chia seeds and adding almond butter. The end result feels like eating a smooth and creamy pudding.
Helps to keep you regular. Almonds, chia seeds, and berries are all rich in fiber which helps to bulk your stool and keeps things flowing through your digestive tract.
Ingredients
1 cup raspberries, fresh or frozen
4 tbsp almond butter
4 tbsp chia seeds
Pinch of salt
Pinch of cinnamon
Toppings, of choice
Method
COOK BERRIES. Place the raspberries into a small saucepan over medium heat. Add 1 cup of water or enough to cover the fruit. Bring to boil. Simmer until berries are softened, about 5 minutes. Remove from heat and let cool.
BLEND. Add cooled raspberries, almond butter, chia seeds, salt, and cinnamon to a high speed blender. Blend until smooth. Add water if needed to achieve desired texture. It should be pourable but not runny.
CHILL. Divide into four jars or bowls. Place in fridge overnight to set and thicken.
SERVE. When ready to eat, top as desired. I used coconut flakes, raspberries, and mint.
