Smashed Potatoes

If you are looking for a new way to serve potatoes, this version gives you crispy, chip-like edges with a soft middle. Bonus points for the fun of squishing each potato.

Ingredients

1 lb baby yellow potatoes

Salt, to taste

2 tbsp olive oil

3 cloves garlic

1 tbsp Italian seasoning

Method
  1. PREP. Preheat oven to 375F. Line a baking sheet with parchment paper or a silicone mat. Peel and mince garlic finely.

  2. BOIL POTATOES. Add potatoes to a large saucepan. Cover with water. Bring to a boil over medium heat. Cook until potatoes can be easily pierced with a fork, about 10 minutes. Drain and rinse with cool water. Let cool slightly.

  3. MAKE HERB OIL. Add oil, garlic, Italian seasoning, and salt to a small bowl. Mix well to combine.

  4. SMASH AND COAT POTATOES. Place potatoes on prepared baking sheet. Using the bottom of a glass or small bowl, gently press down on each potato until it is flattened to about ¼" thick. Brush each potato with the herb oil mixture.

  5. BAKE. Bake potatoes until edges are brown and crispy, about 20 minutes.

  6. SERVE. Plate as desired.

  • Can I use olive oil for cooking? Yes, a good quality olive oil can withstand temperatures until 500°F. It also adds a peppery flavor which compliments the italian herbs.

  • What seasoning blend can I use? Use any mixture of dried herbs with garlic and salt. I used the Trader Joe's sofrito seasoning blend. 

  • How should I serve smashed potatoes? These potatoes are best served fresh from the oven.
