Why you will love this recipe
Uses minimal ingredients. All of the ingredients are items commonly found in the pantry, making this an easy side dish to put together in a pinch.
Feeds good gut bacteria. Cooked and cooled potatoes are a rich source of a type of fiber called resistant starch which feed the gut bacteria and produce beneficial chemical signals for the rest of your body.
Promotes satiety. Potatoes contain compounds that send signals of satiety after a meal, which keeps you feeling satisfied and reduces snacking.
Ingredients
1 lb baby yellow potatoes
Salt, to taste
2 tbsp olive oil
3 cloves garlic
1 tbsp Italian seasoning
Method
PREP. Preheat oven to 375F. Line a baking sheet with parchment paper or a silicone mat. Peel and mince garlic finely.
BOIL POTATOES. Add potatoes to a large saucepan. Cover with water. Bring to a boil over medium heat. Cook until potatoes can be easily pierced with a fork, about 10 minutes. Drain and rinse with cool water. Let cool slightly.
MAKE HERB OIL. Add oil, garlic, Italian seasoning, and salt to a small bowl. Mix well to combine.
SMASH AND COAT POTATOES. Place potatoes on prepared baking sheet. Using the bottom of a glass or small bowl, gently press down on each potato until it is flattened to about ¼" thick. Brush each potato with the herb oil mixture.
BAKE. Bake potatoes until edges are brown and crispy, about 20 minutes.
