Why you will love this recipe
  • Boosts a healthy gut microbiome. Sweet potatoes develop resistant starch when cooled which feeds the good bacteria in your gut.

  • Supports a stable blood sugar response. Contains fiber, protein, and healthy fats which reduce energy spikes and crashes.

  • Can be made with no sweeteners. Steamed sweet potatoes are naturally sweet, and almond flour and cardamom mimic the flavors of indian desserts.

Ingredients
  • 1 medium sweet potato

  • 1 cup almond flour

  • 1 tsp ground cardamom

  • Liquid sweetener, optional, to taste

  • Crushed pistachio, for topping

Method
  1.  STEAM SWEET POTATO. Prick sweet potato all over with a fork or a knife. Place in a steamer basket over boiling water. Steam until a fork can easily glide through the potato, about 15-20 minutes.

  2. MAKE DOUGH. Let potato cool completely. Carefully remove skin and discard. Add potato flesh to a bowl. Mash with a fork until smooth. Add in almond flour 1/4 at a time. Mix until smooth. Repeat until all almond flour is used up. The mixture should be a smooth paste that can come together like a ball. Add cardamom and mix again.

  3. SWEETEN (OPTIONAL). Taste the mixture. If you would like it to be sweeter, add a touch of sweetener of choice.

  4. FORM PEDA. Scoop 1 tbsp balls. Roll to create smooth edges. Flatten into a small circle about 1/2 inch thick. Repeat until all mixture is used.

  5. CHILL. Place in the fridge to set for at least 1 hour.

  6. SERVE. Top with crushed nuts. Serve cold or at room temperature.

Frequently Asked Questions
  • What type of sweet potato should I use to make peda? I prefer the japanese sweet potato since they are creamier and sweeter. I have also tried these with regular orange sweet potatoes but find that they tend to require more almond flour and a touch of sweetener.

  • What can I use instead of almond flour? If you are allergic to almond flour, you could also try these with oat flour, though I have not tested them before.

  • Do I need to add sweetener to these peda? I find that the sweet potatoes are sweet enough on their own but if you like you can add a sweetener of choice a little bit at a time to get to your desired taste. I would recommend using a liquid sweetener as it will dissolve into the mixture easier.
